5 Mini Recipes to Make in a Muffin Pan

When it comes to dishes, food is just so much more fun to eat when it's a mini.

1. Hash Brown Cups 

Ingredients to mix:

454 grams shredded potatoes 

4 tablespoons melted butter

Salt and pepper to taste

Use a 12 cup muffin pan and press mixture into the cups. Bake at 205 ºC until browned and crisp (approximately 45 to 50 minutes). Complete this decadent recipe by filling with scrambled eggs.

2. Broccoli Fritters

Ingredients to mix:

10 whisked eggs

1/4 cup milk

2/3 cup grated cheese (choose 3 of your favourite cheeses)

Salt and pepper to taste

Use a 12 cup muffin pan and divide mixture into the muffin cups.

Sprinkle with finely chopped steamed broccoli (1 cup) and top with grated cheese.

Bake at 190 ºC until just set (approximately 12 to 15 minutes)

Let cool and serve these delicious and healthy snacks everyone will love.


3. Poached Eggs 

Ingredients to mix

To start, add 1 tablespoon hot water into each muffin cup, then crack 1 egg into each cup.

Salt and pepper to taste.

Bake at 175 ºC until done (approximately 12 to 14 minutes).

Remove with a spoon, but be careful to get them out properly without breaking.


4. Bacon Cinnamon Rolls 


Separate refrigerated cinnamon rolls and place into its own oiled muffin cup

Sprinkle crumbled cooked bacon, gently pressing to stick to the cinnamon roll.

Bake cinnamon rolls as per label instructions

Drizzle with maple syrup or your favourite icing - tell us how this one turns out if you make it!


5. Goat Cheese Terrines 

Ingredients to mix

Puree 280 grams goat cheese, 224 grams cream cheese and 1 tablespoon each of roasted garlic and chopped thyme, parsley and chives

Salt and pepper to taste.

Remove half of the mixture

Puree the remaining goat cheese mixture with 1/2 cup chopped cooked beets.

Line 6 muffin cups with plastic wrap

Layer evenly the goat cheese mixtures
